Chef's seasonal Barbeque Recipes

"Sweet and Sour” Chicken Drumsticks ( serves 4)

Ingredients

    4 x Tablespoons Tomato Ketchup
    1 Table Brown sugar
    ½ Teaspoon Grated Ginger
    1 clove of Garlic
    2 Tablespoons White wine Vinegar
    1 Tablespoon Castor Sugar

    Mix all ingredients together and marinade for 12 hours.

“Honey Lemon and Thyme” – nice with Chicken or Pork (serves 4)

    ½ Bunch Chopped Thyme
    1 Teaspoon chopped garlic
    4 Tablespoons good quality Olive Oil or if you prefer, Rapeseed Oil
    1 Tablespoon Honey
    Zest of 1 Lemon and juice of ½ Lemon
    ½ teaspoon Dijon mustard

Method:

Mix all ingredients together and marinade for 12 hours.
